Pumpkin Seed-Crusted Beef Stew

Ingredients

• ½ kg beef, cut into chunks
• 2 tbsp Zima Pumpkin Seed Flour
• 2 tbsp Zima Pumpkin Seed Oil
• 1 onion, chopped
• 2 tomatoes, blended
• 1 carrot, diced
• 1 eggplant, diced
• 1 tsp salt
• ½ tsp black pepper

Inspiration

Traditional Rwandan beef stew thickened with Pumpkin Seed Flour.

Instructions

1. Brown beef in Pumpkin Seed Oil.
2. Add onion, tomatoes, carrots, and eggplant. Simmer for 20 minutes.
3. Stir in Pumpkin Seed Flour to thicken.
Serving Suggestion: Serve with cassava ugali or rice.
