Golden Pumpkin Seed Oil Rice

Ingredients

• 2 cups rice
• 2 tbsp Zima Pumpkin Seed Oil
• 1 medium onion, chopped
• 1 clove garlic, minced
• 1 carrot, finely diced
• ½ red pepper, chopped
• ½ cup Zima Roasted Pumpkin Seeds (crushed)
• Salt to taste
• 3 cups water

Traditional Rwandan rice enhanced with the nutty flavor of Pumpkin Seed Oil.

Instructions

1. Heat Pumpkin Seed Oil in a pot, sauté onion and garlic until soft.
2. Add diced carrots and red pepper, stir for 2 minutes.
3. Add rice, stirring to coat with the oil.
4. Pour water, cook until rice is tender.
5. Stir in crushed Roasted Pumpkin Seeds before serving.
Serving Suggestion: Best with grilled beef or vegetable stew.
