1. Heat Pumpkin Seed Oil in a pot, sauté onion and garlic until soft.
2. Add diced carrots and red pepper, stir for 2 minutes.
3. Add rice, stirring to coat with the oil.
4. Pour water, cook until rice is tender.
5. Stir in crushed Roasted Pumpkin Seeds before serving.
Serving Suggestion: Best with grilled beef or vegetable stew.
